Parsnip Soup Recipe

Ingredients

  • 4 parsnips, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add parsnips and chicken broth, and bring to a boil. Reduce heat and simmer until parsnips are tender.
  3. Using an immersion blender, puree the soup until smooth.
  4. Stir in heavy cream and crumbled turkey bacon. Heat through and season with salt and pepper.
