  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 pint vanilla ice cream
  • 1 pint red velvet or strawberry ice cream
  • 1 pint blue raspberry or blueberry ice cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking soda, and salt in a separate bowl; gradually blend into the creamed mixture.
  5. Fold in the chocolate chips.
  6. Drop dough by rounded tablespoons onto ungreased baking sheets.
  7. Bake for 10 to 12 minutes or until golden brown. Let cool.
  8. Once cookies are cool, scoop a generous amount of vanilla ice cream onto a cookie and top with another cookie to form a sandwich.
  9. Repeat with remaining cookies and ice cream. Freeze until firm.
