  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1/2 cup confectioners’ sugar
  • 1/4 cup crushed candy canes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, beat the softened butter and granulated sugar until creamy.
  4. Add the egg, vanilla extract, and peppermint extract to the butter mixture, and mix well.
  5. Gradually incorporate the flour mixture into the wet ingredients until combined.
  6. Drop tablespoons of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes until edges are golden.
  8. Remove from the oven and let them cool.
  9. Sandwich two cookies with frosting and sprinkle with crushed candy canes.

Notes

  • For softer cookies, do not overbake.
