Potato and Sausage Foil Packets

Ingredients

  • 4 medium potatoes, diced
  • 1 pound sausage, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your grill to medium heat.
  2. In a large bowl, combine the diced potatoes and sliced sausage.
  3. Add olive oil, garlic powder, paprika, salt, and black pepper. Toss to coat.
  4. Lay out a large piece of aluminum foil and place a portion of the potato and sausage mixture in the center.
  5. Fold the sides of the foil over the mixture and seal tightly.
  6. Place the foil packet on the grill and cook for about 25-30 minutes.
  7. Once cooked, carefully open the foil packet, being cautious of the steam.
  8. Garnish with chopped parsley before serving.

  • For added flavor, you can include your favorite vegetables.
  • These packets can be made ahead of time and stored in the fridge until ready to cook.
