Ingredients

  • 2 large sweet potatoes
  • 6 eggs
  • 1 cup spinach
  • 1/2 cup diced onion
  • 1/2 cup bell pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pierce the sweet potatoes with a fork and microwave on high for 5-7 minutes until tender.
  3. In a skillet, sauté onion and bell pepper until soft.
  4. Peel and cube the sweet potatoes, then mix with sautéed vegetables.
  5. In a bowl, whisk the eggs and add spinach, garlic powder, paprika, salt, and pepper.
  6. Combine sweet potato mixture with the egg mixture and pour into a greased baking dish.
  7. Bake for 30-35 minutes until the eggs are set.
