Pumpkin Protein Muffins

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup protein powder
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the pumpkin puree, protein powder, oats, honey, almond milk, eggs, and spices.
  3. In another bowl, mix the baking soda and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fill muffin tins with the batter and bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Allow to cool before serving.

Notes

  • For a sweeter muffin, add chocolate chips.
  • These muffins can be made ahead of time and stored for a week.
