Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix pumpkin puree, vegetable oil, and sugar until combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in walnuts if using.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
