Quinoa Breakfast Bowl

A delicious and nutritious quinoa breakfast bowl featuring turkey bacon and fresh vegetables.

Ingredients

  • 1 cup quinoa
  • 4 slices turkey bacon
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup spinach
  • 2 eggs
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook quinoa according to package instructions.
  2. In a skillet, cook turkey bacon until crispy, then remove and chop.
  3. Add olive oil to the skillet and sauté bell pepper, zucchini, and spinach until tender.
