  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 1 cup spinach, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, sauté the onion and garlic until translucent.
  3. Add the carrot and bell pepper, and cook for a few more minutes.
  4. Add the red lentils, brown rice, vegetable broth, and spices. Stir well.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  6. Stir in the spinach and mix until wilted.
  7. Transfer the mixture to a greased casserole dish and bake for 25 minutes.
  8. Let it cool slightly before serving.
