  • 8 ounces penne pasta
  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup chicken broth
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, cook the Italian sausage over medium heat until browned. Drain excess fat.
  3. Add the onion and garlic; sauté until the onion is translucent.
  4. Stir in the diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  5. Bring to a simmer, then add the pasta and spinach; stir until spinach wilts.
  6. Remove from heat and sprinkle with mozzarella cheese before serving.
