- 1 pound Italian sausage
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chicken broth
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- Cook the penne pasta according to package instructions; drain and set aside.
- In a large skillet, cook the Italian sausage over medium heat until browned. Drain excess fat.
- Add the onion and garlic; sauté until the onion is translucent.
- Stir in the diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a simmer, then add the pasta and spinach; stir until spinach wilts.
