This sheet pan salmon recipe is perfect for a quick weeknight dinner, featuring tender salmon fillets paired with roasted broccoli and crispy potatoes.

  • 4 salmon fillets
  • 1 pound broccoli florets
  • 1 pound baby potatoes, halved
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • salt to taste
  • pepper to taste
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a large sheet pan, toss the baby potatoes with 2 tablespoons of olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them out in a single layer.
  3. Bake potatoes for 15 minutes.
  4. Add the broccoli to the pan, drizzle with remaining olive oil, and season with salt and pepper. Toss to coat.
  5. Make space for the salmon fillets and place them on the sheet pan. Top with lemon slices.
  6. Return to the oven and bake for an additional 15-20 minutes, until the salmon is cooked through and vegetables are tender.
