- 2 pounds beef chuck, cut into 1-inch pieces
- 1 tablespoon olive oil
- 4 ounces bacon, diced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon fresh thyme
- 1 bay leaf
- 4 medium carrots, sliced
- 1 pound baby potatoes, halved
- 8 ounces mushrooms, sliced
- 1 tablespoon cornstarch (optional, for thickening)
- Salt and Pepper to taste
- In a skillet, brown the bacon over medium heat. Remove and set aside.
- In the same skillet, add olive oil and brown the beef in batches.
- Add the onions and garlic, cooking until softened.
- Transfer beef, bacon, onions, and garlic to the slow cooker.
- Pour in red wine and beef broth, then add tomato paste, thyme, and bay leaf.
- Add carrots, potatoes, and mushrooms.
- Cook on low for 8 hours or high for 4 hours until meat is tender.
- If desired, mix cornstarch with a little water, stir into the stew to thicken before serving.
Notes
- For a deeper flavor, marinate the beef in wine overnight.
- Serve with crusty bread for best enjoyment.
