Slow Cooker Beef Bourguignon

This Slow Cooker Beef Bourguignon is a rich and indulgent dish, perfect for a comforting meal.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 ounces bacon, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme
  • 1 bay leaf
  • 4 medium carrots, sliced
  • 1 pound baby potatoes, halved
  • 8 ounces mushrooms, sliced
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and Pepper to taste

Instructions

  1. In a skillet, brown the bacon over medium heat. Remove and set aside.
  2. In the same skillet, add olive oil and brown the beef in batches.
  3. Add the onions and garlic, cooking until softened.
  4. Transfer beef, bacon, onions, and garlic to the slow cooker.
  5. Pour in red wine and beef broth, then add tomato paste, thyme, and bay leaf.
  6. Add carrots, potatoes, and mushrooms.
  7. Cook on low for 8 hours or high for 4 hours until meat is tender.
  8. If desired, mix cornstarch with a little water, stir into the stew to thicken before serving.

Notes

  • For a deeper flavor, marinate the beef in wine overnight.
  • Serve with crusty bread for best enjoyment.
