  • 2 pounds beef chuck, cut into 2-inch pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, diced
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 3 cups red wine
  • 2 cups beef broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 pound mushrooms, quartered
  • 2 tablespoons flour
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat and cook the bacon until crisp.
  2. Add the beef to the skillet and brown on all sides.
  3. Transfer the beef and bacon to the slow cooker.
  4. Add the onion, carrots, garlic, and tomato paste.
  5. Pour in the red wine and beef broth. Stir in thyme, bay leaf, salt, and pepper.
  6. Cover and cook on low for 8 hours or until the meat is tender.
  7. In the last hour of cooking, add the mushrooms and flour to thicken the sauce.
  8. Remove the bay leaf before serving.
