- 2 pounds beef chuck, cut into 2-inch pieces
- 1 tablespoon olive oil
- 4 slices bacon, diced
- 1 onion, chopped
- 3 carrots, sliced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 3 cups red wine
- 2 cups beef broth
- 1 teaspoon thyme
- 1 bay leaf
- 1 pound mushrooms, quartered
- 2 tablespoons flour
- Salt and pepper to taste
- In a skillet, heat olive oil over medium heat and cook the bacon until crisp.
- Add the beef to the skillet and brown on all sides.
