Slow Cooker Lemon Herb Chicken and Rice

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley, chopped

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix the rice, chicken broth, lemon zest, lemon juice, garlic, oregano, thyme, salt, and pepper.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, stir in the chopped parsley before serving.

Notes

  • You can substitute brown rice for white rice, but adjust the cooking time for longer.
