Smokey Sausage Potato & Kale Soup

Ingredients

  • 1 pound smoked sausage
  • 4 cups diced potatoes
  • 2 cups chopped kale
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add the smoked sausage and cook until browned.
  3. Stir in the diced potatoes, smoked paprika, and black pepper.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes or until potatoes are tender.
  6. Fold in the kale and cook for an additional 5 minutes.
