Spanish-Style Roasted Red Pepper and Paprika Prawn Rice

A delicious blend of roasted red peppers and prawns, seasoned with paprika for a flavorful rice dish.

Ingredients

  • 2 cups rice
  • 1 pound prawns
  • 1 cup roasted red peppers
  • 2 tablespoons smoked paprika
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in the smoked paprika, followed by the rice, and cook for another minute.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer until rice is cooked.
  6. In the last few minutes of cooking, add prawns and roasted red peppers.
  7. Season with salt and black pepper before serving.

Notes

  • For a spicier kick, add chopped chili peppers.
  • Fresh herbs like parsley can be used as garnish.
