Spicy Chipotle Buddha Bowl with Cauliflower Rice

  • 1 cup cauliflower rice
  • 1 can black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 lime, juiced
  • 2 tablespoons chipotle sauce
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add cauliflower rice and sauté for about 5 minutes.
  3. Stir in chipotle sauce, cumin, paprika, garlic powder, salt, and pepper. Cook for another 2-3 minutes.
  4. Remove from heat and stir in lime juice.
  5. In a bowl, layer the cauliflower rice, black beans, sliced avocado, cherry tomatoes, and cilantro.
  6. Drizzle with additional lime juice if desired and serve immediately.

Notes
