- 1 cup cauliflower rice
- 1 can black beans, drained and rinsed
- 1 avocado, sliced
- 1 lime, juiced
- 2 tablespoons chipotle sauce
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- In a large skillet, heat olive oil over medium heat.
- Add cauliflower rice and sauté for about 5 minutes.
- Stir in chipotle sauce, cumin, paprika, garlic powder, salt, and pepper. Cook for another 2-3 minutes.
- Remove from heat and stir in lime juice.
- In a bowl, layer the cauliflower rice, black beans, sliced avocado, cherry tomatoes, and cilantro.
- Drizzle with additional lime juice if desired and serve immediately.
