Spicy Chipotle Chicken Tortilla Soup

A hearty and flavorful soup with a kick, perfect for warming up on a chilly day.

  • 1 pound chicken breast, cooked and shredded
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 can (4 oz) diced green chilies
  • 2 tablespoons chipotle peppers in adobo sauce, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups corn, frozen or fresh
  • 1 cup black beans, drained and rinsed
  • 2 cups tortilla strips
  • 1 cup shredded cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Add cooked chicken, diced tomatoes, chicken broth, green chilies, chipotle peppers, cumin, and chili powder. Bring to a simmer.
  3. Stir in corn and black beans, cooking for an additional 10 minutes.
  4. Serve hot, topped with tortilla strips and cheese if desired.

Notes

  • For an extra kick, add more chipotle peppers.
  • Serve with avocado and lime for added flavor.
