Spicy Tuna Crispy Rice

Ingredients

  • 1 cup sushi rice
  • 2 cups water
  • 1 lb sushi-grade tuna, diced
  • 2 tbsp mayonnaise
  • 1 tbsp Sriracha
  • 1 green onion, finely chopped
  • 1 avocado, sliced
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 sheet nori, cut into strips

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the rice and water, then bring to a boil.
  3. Reduce heat to low, cover, and simmer for 20 minutes.
  4. Remove from heat and let it sit for 10 minutes.
  5. In a bowl, mix tuna, mayonnaise, Sriracha, and green onion.
  6. Combine rice, sesame oil, and rice vinegar in a separate bowl and mix gently.
  7. Form small rice cakes with the rice mixture and fry them until golden brown.
  8. Top each rice cake with the spicy tuna mixture and a slice of avocado.
  9. Garnish with nori strips.
