  • 2 cups sushi rice
  • 1 pound sushi-grade tuna
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 2 tablespoons green onions, chopped
  • 1 teaspoon sesame oil
  • 1 cup panko breadcrumbs
  • 1/4 cup avocado, diced
  • 1 tablespoon sesame seeds

Instructions

  1. Rinse sushi rice under cold water until the water runs clear.
  2. Cook the sushi rice according to package instructions.
  3. While the rice is cooking, prepare the spicy tuna by mixing together the diced tuna, mayonnaise, sriracha, soy sauce, green onions, and sesame oil in a bowl.
  4. Once the rice is cooked, let it cool slightly and then mold it into cubes or rectangles.
  5. Coat each piece of rice in panko breadcrumbs.
  6. Heat oil in a pan and fry the rice pieces until golden brown and crispy.
  7. Top each piece with the spicy tuna mixture and diced avocado.
  8. Garnish with sesame seeds.

Notes

  • For added flavor, soak the panko in a little sesame oil before frying.
