Spinach Artichoke Chicken Bake – Creamy Low-Carb Family Dinner

A delicious and creamy low-carb family dinner featuring spinach, artichokes, and chicken.

  • 1 pound chicken breasts
  • 1 cup spinach, chopped
  • 1 can artichoke hearts, drained and chopped
  • 1 cup cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix the cream cheese, Parmesan cheese, garlic, onion powder, garlic powder, salt, and pepper until well combined.
  3. Add the chopped spinach and artichokes to the mixture and stir until incorporated.
  4. In a baking dish, place the chicken breasts and spread the mixture on top.
  5. Sprinkle mozzarella cheese over the top.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly.
