Split Pea and Ham Soup

A hearty and comforting soup made with split peas and turkey bacon, offering a delicious twist on a classic recipe.

  • 1 cup split peas
  • 4 slices turkey bacon
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Rinse the split peas under cold water and set aside.
  2. In a large pot, cook the turkey bacon over medium heat until crispy, then remove and crumble.
  3. Add the onion, carrots, and celery to the pot; sauté until softened.
  4. Stir in the garlic and cook for an additional minute.
  5. Add the split peas, vegetable broth, thyme, pepper, bay leaf, and crumbled bacon to the pot.
  6. Bring to a boil, then reduce the heat and simmer for 45 minutes or until peas are tender.
  7. Remove the bay leaf before serving.

Notes

  • For a thicker soup, blend part of the soup or mash with a potato masher.
  • Adjust the seasoning according to taste.
