  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup strawberry puree

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large bowl, beat the cream cheese and sugar until smooth.
  5. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  6. Stir in the sour cream until just combined.
  7. Pour the cream cheese mixture over the crust in the springform pan.
  8. Drop spoonfuls of strawberry puree on top and use a knife to swirl it into the batter.
  9. Bake for 1 hour or until the edges are set.
  10. Turn off the oven and leave the cheesecake inside for another hour.
  11. Chill in the refrigerator for at least 4 hours or overnight before serving.

Notes

  • For a richer flavor, use full-fat cream cheese.
  • Make sure the eggs are at room temperature for better mixing.
