- 1 cup cooked chickpeas
- 1 medium sweet potato, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 whole wheat tortillas
- 1 cup fresh spinach
- 1/2 avocado, sliced
- Preheat oven to 400°F.
- Toss sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet.
- Bake for 20-25 minutes until tender.
- In a bowl, mix chickpeas, baked sweet potatoes, and spinach.
- Place mixture in tortillas and top with avocado slices.
