Sweet Potato Chickpea Protein Wrap

A wholesome wrap filled with protein-rich chickpeas and sweet potatoes, perfect for a nutritious meal.

Ingredients

  • 1 cup cooked chickpeas
  • 1 medium sweet potato, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 whole wheat tortillas
  • 1 cup fresh spinach
  • 1/2 avocado, sliced

Instructions

  1. Preheat oven to 400°F.
  2. Toss sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet.
  3. Bake for 20-25 minutes until tender.
  4. In a bowl, mix chickpeas, baked sweet potatoes, and spinach.
  5. Place mixture in tortillas and top with avocado slices.
  6. Roll the tortillas tightly and enjoy.

Notes

  • Substitute black beans for chickpeas if desired.
