Sweet Potato Chowder

A warm and comforting chowder featuring sweet potatoes and turkey bacon, perfect for chilly days.

Ingredients

  • 2 cups sweet potatoes, peeled and diced
  • 4 strips turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté the onions and garlic until translucent.
  3. Add the sweet potatoes and cook for a few minutes.
  4. Pour in the vegetable broth, bring to a boil, and then simmer until the sweet potatoes are tender.
  5. Stir in the heavy cream and thyme, then season with salt and pepper.
  6. Blend the chowder until smooth, return the bacon to the pot, and heat through before serving.
