  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon red curry paste
  • 1 can (13.5 oz) coconut milk
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, sliced
  • 2 cups spinach, packed
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon cilantro, chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger; sauté until softened.
  3. Stir in the red curry paste and cook for another minute.
  4. Add the coconut milk and chicken broth; bring to a boil.
  5. Add the cooked chicken, mushrooms, and bell peppers; simmer for 10 minutes.
  6. Stir in the spinach, lime juice, and fish sauce. Cook until the spinach is wilted.
  7. Garnish with cilantro before serving.

  • This soup can be adjusted for spice according to your preferences.
  • For a vegetarian version, substitute chicken with tofu and use vegetable broth.
