Ingredients

  • 1/2 cup honey or maple syrup
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, combine the grated zucchini, cocoa powder, sweetener, almond flour, melted coconut oil, vanilla extract, eggs, baking soda, and salt. Mix until well combined.
  3. Pour the batter into the prepared baking pan and spread it evenly.
  4. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  5. Let cool before serving.
