Vegetarian Chili

A warm and hearty vegetarian chili recipe that’s perfect for cold nights.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn, frozen or canned

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, bell pepper, celery, and carrots. Sauté until softened.
  3. Stir in the diced tomatoes, kidney beans, black beans, vegetable broth, chili powder, cumin, smoked paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Add corn and cook for an additional 5-10 minutes before serving.

Notes

  • For added spice, include some chopped jalapeños.
  • Serve with avocado or sour cream for garnish.
