1 pound boneless, skinless chicken breasts
4 slices turkey bacon
1 can (15 oz) white beans, drained and rinsed
1 can (4 oz) diced green chilies
1 medium onion, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon paprika
4 cups chicken broth
1 cup corn, frozen or canned
1 tablespoon olive oil
Salt and pepper to taste
Instructions
In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
Add diced onion and minced garlic to the pot. Sauté until softened.
Add chicken breasts and brown on both sides.
Stir in green chilies, cumin, paprika, chicken broth, and beans. Bring to a simmer.
Cook for 20-25 minutes, or until chicken is cooked through, then shred the chicken.
Add corn and cooked turkey bacon back into the pot, season with salt and pepper, and heat through.
Serve hot, optionally topped with cilantro or avocado.
Notes
This chili can be made ahead of time and tastes even better the next day.
